Well, yesterday was an eye opener and a real taste bud pleaser! Spent the day doing a Permacook workshop at the Yandina Community Gardens with Elizabeth Fekonia learning how to harvest, process, store, cook and eat some of the sub tropical/tropical plants that thrive here on the Sunshine Coast.
Working with what's in-season and available in the garden right now, my favourites were:
Cassava cake
Sweet cassava balls
Yam patties
Sweet potato and banana salad
Sweet potato and peanut patties
Madagascar bean and pit pit salad
and cassava in coconut cream (all very tasty and yummy)
I cooked a dahl using the seeds of the pigeon pea plant - very tasty too.
