Purslane

Here is the short of a long story. A "weed" that I'll bet we all have growing in our garden is a wonderful, tasty, nutritious vegetable with high levels of vitamin C and lots of anti-oxidants. I either put some in my salad every day, or make a salad of just purslane. For winter, you could can it, pickle it, or freeze it. Zowies! Boy is it good! Check it out on the following links.

Purslane

I have been encouraging purslane in my garden for several years. It's growing now among my pole beans. Wikipedia notes that it grows in compacted soils. I have a large patch growing in a thin gravel pathway over compacted clay. In fact, that's where I noted the first plant. Its growth habit there is considerably different than the plants growing in my well-composted garden soil. It's sad that it got stuck with the nickname, "pigweed".
